Golgappa Paani:
Take the tamarind pulp, mint leaves, cumin, black pepper, lemon, coriander leaves, chillies and salt to taste.
Make a Paste:
Mix all the ingredients and make a paste now strain it, add some chilled water along with some boondi and your golgappa pani is ready.
Filling:
Chop some onions, green chillies and take some boiled white and black chickpeas. Add salt, red chilli powder, and lemon juice. Give it a nice stir to mix all the spices properly. You can add boiled potatoes too.
Dough:
Take semolina, oil, salt and baking soda. Make thought out of it. Knead the dough till it reaches to mid soft stage now keep it aside for 30 minutes.
Shaping:
Roll out the dough and make small bite sized puris. Do not put pressure, try to keep it thin from the sides.
Frying Golgappa:
Fry only a few puris in the oil and do not overcrowd it. It affects the oil temperature fry till it gets a nice light golden colour.
Assembling:
Take the crispy puri and place the spicy filling into it now take a deep dive in the minty tangy and spicy water. Make this easy recipe of golgappa at home and enjoy.
